Strawberry Cheesecake Rolls

ingredients

  • 3/4 cups warm Milk
  • 2 1/4 teaspoons Instant Yeast
  • 1 tablespoons Granulated Sugar
  • 1/3 cups melted Unsalted Butter
  • 2 eggs Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cups Granulated Sugar
  • 3 1/2 cups All Purpose Flour + more for dusting
  • 8 ounces softened Cream Cheese
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 12 pieces fresh Strawberries
  • 12 fresh Strawberries
  • 4 tablespoons Granulated Sugar

Method

  • Step 1

    In a small bowl, mix in your warm milk, yeast and 1 tbsp of sugar. Give it a quick stir and set it aside for 10 minutes until it’s frothy. If this doesn’t happen that means your yeast didn’t bloom so you will have to start the process again.. It’s important your yeast blooms.

  • Step 2

    Heat your oven to 170 degrees or to the warm setting.

  • Step 3

    In your mixer bowl, pour 3 1/2 cup of flour. Add in your melted butter, vanilla and sugar and turn it the first level on your stand mixer.

  • Step 4

    While it mixes, slowly add in your milk mixture.

  • Step 5

    Start to add in one egg at a time until they are fully mixed in.

  • Step 6

    Turn to speed 4 on your mixer and let it knead for 5 minutes. The dough should look nice and smooth and gives a little bounce back when you poke it. If you are manually kneading the dough: Flour your surface and knead the dough for 6 minutes using a little sprinkle of flour at a time if it’s too sticky. As you keep kneading it, it should not be as sticky anymore. You should not have to use more than 1/4 cup of flour. When the dough is nice and smooth and bounces back when you poke it, form it into a ball.

  • Step 7

    Grease your bowl with a little oil and place the inside the bowl and cover with kitchen towel or plastic wrap.

  • Step 8

    Crack open your oven door and place the bowl at the edge of the stovetop so that the bowl can be close to the cracked oven door. Leave the dough to rise for 1 hour. If not doing the oven trick, place in a warm area for 1 hour and half.

  • Step 9

    Once the dough has risen for an hour, turn off your oven and sprinkle some flour onto your rolling surface. Place your dough on your rolling surface and slightly punch it down. Using a rolling pin, roll out your dough into a large 16×14 rectangle.

  • Step 10

    In a separate bowl, cream together the softened cream cheese, vanilla and powdered sugar until it’s nice and smooth.

  • Step 11

    Next dice about 10-12 strawberries.

  • Step 12

    Using a spatula, spread the cream cheese all over the dough.

  • Step 13

    Sprinkle the chopped strawberries all over the cream cheese.

  • Step 14

    Roll the dough to form a large log.

  • Step 15

    Grab your 9×13 baking pan. Then using your knife slice 12 equal slices and place onto your 9×13 baking sheet.

  • Step 16

    The rolls should have about an inch space between each other. They should not be touching because you want to give them a little space for them to rise.

  • Step 17

    Cover the baking pan and allow the rolls to rise for 30 minutes.

  • Step 18

    Preheat your oven to 350 degrees.

  • Step 19

    Bake for 30 minutes.

  • Step 20

    Remove from the oven and allow to slightly cool for 5 minutes.

  • Step 21

    While the rolls bake, make the topping.

  • Step 22

    Cut 12 strawberries in half and place in a pan with 4 Tbsp of sugar.

  • Step 23

    Cool on medium high heat for 5 minutes until the strawberries start releasing its juices and turn squishy.

  • Step 24

    Taking a fork, smash the strawberries and cook for another 2 minutes.

  • Step 25

    Remove the rolls from the oven and pour the strawberry topping on top of all the rolls.
