- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 3 tablespoons Red Gold Roasted Garlic Tomato Paste
- 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes
- 2 (32 ounce) cartons chicken broth or bone broth
- 1 cup heavy whipping cream (or sub 1 cup milk + 2 tablespoons arrowroot starch for a lighter option)
- 4 teaspoons chopped fresh basil, plus more for garnish
- 2 teaspoons kosher salt
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper, plus more for garnish
- 8 ounces uncooked pasta of choice
- 3 cups fresh baby spinach, roughly chopped
- 2 cups shredded chicken
- 8 ounces room temperature cream cheese, cubed
- 1/4 cup finely shredded Parmesan cheese, plus more for serving
Method
Step 1
Heat olive oil in a large Dutch oven over medium heat. Add chopped onion and garlic, cooking for 3-4 minutes until softened.
Step 2
Stir in tomato paste and cook for about 2 minutes, until it deepens in color.

Add petite diced tomatoes, chicken broth, cream, basil, salt, Italian seasoning, garlic powder, and crushed red pepper. Bring to a boil, stirring occasionally, about 12 minutes.
Step 4
Reduce heat to medium-low and add uncooked pasta. Cook for about 7 minutes, until pasta is al dente.
Step 5
Lower the heat and stir in baby spinach, shredded chicken, cream cheese, and Parmesan. Stir until cream cheese and Parmesan are melted, and chicken is heated through, about 5 minutes.
