1/2 a cup pecans or almonds
1/2 a cup cashews
1 and 1/2 a cup shredded coconut
1/2 a cup maple syrup.
Mix all ingredients together in a food processor. - Press the crust evenly out in a round cake tin with baking paper, remember to press some of the crust up to the sides as well. Bake it for 12-15 minutes an 170 C.
1 cup fresh coconut meat (I used two young coconuts)
1/4 of a cup coconut milk
2 tsp vanilla powder.
Crack the coconut(s). - Pour out the coconut water into a bowl. - Scoop out the coconut flesh and place it in a food processor. - Mix the coconut flesh, vanilla and the coconut milk until smooth. - Place the mixture into your pie crust
