Spicy Mexican Mac and Cheese

ingredients
- 1 box Annie's Organic Vegan Mac and Cheese
- 2 tablespoons vegan butter
- 2 tablepoons avocado oil
- 1/2 package soyrizo
- 1 bell pepper, small dice
- 1/4 onion, small dice
- 1 serrano pepper, minced
Method
Step 1
Cook mac and cheese according to the box instructions.
Step 2
While pasta is cooking, sauté onion and serrano pepper avocado oil over medium heat until onions are soft and translucent. Add bell pepper and sauté until the peppers start to soften.
Step 3
Add soyrzio and cook until the soyrizio is slightly crispy.
Step 4
Add soyrizo mixture to the prepared mac and stir to combine. If you’re feelin’ zesty, top off with some fresh cilantro.
