1 ripe peach, pitted and sliced (reserve 2 thin slices for garnish, if desired)
2 limes, divided
Handful of fresh basil
4 oz bourbon
Crushed Ice, as needed
2-3 oz Ginger Beer
Tools: muddler, 2 pint sized mason jar
Cut one lime into wheels, and cut the other into twists for garnish. Divide the peach slices between each mason jar and top with a wheel of lime and a few torn up basil leaves. Muddle the ingredients until the peach starts to break down. Add two ounces of bourbon to each jar, then top with ice, leaving some room at the top of the jar.
Add the lids to the jars and give them a shake. Remove lids, top each cocktail with ginger beer, then garnish with lime zest and wheel, sliced peach (if using) and a sprig of basil.
