ingredients
- 1 package puff pastry, thawed
- 2-3 zucchinis (green and yellow)
- 1 (8 ounce) package goat cheese
- Dried thyme leaves
- Olive oil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 large egg (for egg wash)
Method
Step 1
Preheat the oven to 400°F.
Step 2
Thinly slice the zucchinis to about 1/8-inch thickness. Boil the slices for 5 minutes, then drain and pat dry with a paper towel.
Step 3
On a lightly floured surface, roll out the puff pastry into a slightly larger rectangle than its original size.
Step 4
Cut the dough into 6 strips lengthwise.
Step 5
Spread one tablespoon of goat cheese along each strip of pastry.

Sprinkle freshly cracked pepper, dried thyme leaves, and a drizzle of olive oil over the goat cheese.

Place the zucchini slices on each strip, overlapping slightly and allowing half of each slice to stick out above the pastry.

Gently roll each pastry strip up from one end to the other, forming a rose shape

Place each roll into a muffin tin to help maintain the shape while baking.

Brush each roll with a beaten egg to create a golden finish.

Bake in the preheated oven for 25-30 minutes or until the pastry is golden and crispy.
