"Papayas are one of the most delicious, vibrant fruits in the world. Kaua’i is home to the best and they make for the perfect healthy breakfast. They GO OFF in the summer and if you’re not already friends with all your neighbors… Best get your shit together. This is a simple recipe for those ridiculously hot summer mornings. You don’t need to go crazy with adding every fruit in your household, chocolate chips and honey. Remember, this is meant to be a healthy breakfast. There’s a fat dose of antioxidants from the blueberries, some awesome probiotics in the yogurt, and a whole ton of fiber in the granola and chia seeds. ON TOP OF THAT, papayas are a natural diuretic-- your gut will thank you later."

ingredients

  • 1 Fresh Papaya
  • 1 cup Non-fat Greek Yogurt
  • 4 tbsp Ancient Grains Granola
  • 1/2 tsp Chia Seeds
  • 12 Epic Blueberries
  • 1 Lime
  • 2 Apple Bananas

Method

  • Step 1

    Slice the papaya in half, length-ways, and scoop out all of the seeds. ***Save the seeds, they're perfect for compost and, who knows, a tree might sprout if you're lucky.

  • Step 2

    Give the center a fat dollop of the yogurt and garnish with granola, blueberries, sliced banana and chia seeds.

  • Step 3

    Squeeze a lime over the top and enjoy.
