Haole Guacamole

"Guacamole comes in many forms. In it's simplest form-- mashed avocados and lime juice will pretty much do the trick. But, c'mon, snooze-fest people! Guacamole should be fun, vibrant and, most importantly, addicting. Here's a haole's take on that. ***Always choose Hass Avocados-- they're the butteriest of the bunch. REMEMBER! Fat is flavor.***"

ingredients

  • 2 Hass Avocados
  • 2 minced Garlic Cloves
  • 1/2 finely diced Shallot
  • 1 small bunch chiffonade Cilantro
  • 8 quartered Grape Tomatoes
  • 1 1/2 juiced Limes
  • Flakey Salt

Method

  • Step 1

    Cut the avocados in half, remove the peel and seed and give them a rough chop on the cutting board. Transfer them to a bowl and, using the back of the prongs on a large fork, mash them. You want them chunky so don't overdo it.

  • Step 2

    Add the finely diced shallot, garlic, cilantro and lime juice and fold in with 3/4 of the grape tomatoes.

  • Step 3

    Season with flakey salt and top with the rest of the quartered grape tomatoes. Serve ice cold and, if you got one, in a molcajete.
