ingredients
- 3 Farm Fresh Eggs
- 4 slices Thick-cut Bacon
- 2 Hawaiian Sweet Sub Rolls
- 4 stalk Green Onion
- 1 tsp Sriracha
- 1/8 cup Kewpie Mayonnaise
- Salt & Fresh Cracked Black Pepper
Method
Step 1
Put two skillets over high heat. Lay your bacon away from you in one skillet and pepper the shit out of it. Sear on both sides and set aside to dry on a napkin.
Step 2
Break three eggs into the other pan with a little butter and pop the yolks once the egg whites become slightly matte. Swirl it together to create a marble effect. Turn off the burner and allow them to finish from the residual heat of the skillet. DO NOT FLIP.
Step 3
The Hawaiian Sweet Subs will come linked in a row of three-- break off the end so there are two connected. Butter them and lightly toast.
Step 4
Mix the sriracha and Kewpie mayonnaise together in a bowl and set aside.
Step 5
Slice the green onion lengthwise in half, then two more times till you have 4 strips. They will start to curl up so be careful. Soak the green onion strips in ice water until they curl into ribbons.
Step 6
Place the bacon on the bottom slice of sweet bread. Set your egg on top and then drizzle with the sriracha-mayo sauce. Put a ridiculous amount of the green onion ribbons on top and close the sandwich with the top slice of sweet bread.
