ingredients

Chocolate Decadence

  • 13 ounces Semisweet Chocolate
  • 1/2 cup Water
  • 1 cup plus 1 tablespoon Granulated Sugar
  • 1 cup Softened Butter
  • 1 1/2 cups Heavy Whipping Cream
  • 6 Farm Fresh Eggs

Method

For the Cake

  • Step 1

    Start by buttering a 1 x 9 inch cake pan. Bring water, butter and 1 cup of the sugar to a boil before dropping in the chocolate and stirring to melt.

  • Step 2

    Whip eggs and the remaining tablespoon of sugar to a ribbon stage and fold in chocolate mixture.

  • Step 3

    Pour into the cake pan, carefully bang out any air-bubbles and bake at 350 degrees for 40 minutes or until the center jiggles slightly and has adhered to the sides of the pan.

  • Step 4

    Chill for at least 2 hours.

Chocolate Ganache Topping

  • 8 ounces Ghirardelli Chocolate Chips
  • 1 cup Heavy Whipping Cream
  • 5 drops Almond Extract

For the Topping

  • Step 1

    Bring the heavy whipping to a moderate simmer before dropping in all of the chocolate and almond extract. Make sure that the chocolate is fully submerged.

  • Step 2

    Whisk the ganache together making sure to get the sides. All chocolate must be incorporated or it will split.

  • Step 3

    Pour over the top of the chilled cake and run a slotted spatula over the top to flatten out. Chill for at least an hour before serving.
