Veggie Pita Pizzas
Raw Vegetable and Hummus Pita Pitza A cool take on pizza. Fresh herbs and veggies on top of toasted pita is a quick and healthy snack or appetizer. Also fun for kids. Chop veggies and let them create their own pitza. Great during the warmer months as well.
Ingredients: 2 pitas 1/2 a cucumber, thinly sliced 2 mini bell pepper, sliced into rings 1 scallion, thinly sliced 1/2 c purple cabbage 1 carrot, thinly sliced 4 tbsp hummus 2-3 mint leaves, chopped 5-6 rosemary leaves 1 tsp hemp hearts Instructions: Preheat oven to 350. On a baking sheet, toast pita for 10 minutes. Smear hummus on pita. Top with veggies, herbs and hemp hearts. Cut into triangles.
