Portobello And Black Bean Tacos
a recipe from feedfeed: <br> <br> Serves 1<br> <br> 1 tsp coconut oil 1 cup baby portobellos, diced<br> Couple handfuls baby spinach <br> 1 cup black beans, drained & rinsed <br> cumin, paprika, chili flakes, garlic powder and sea salt, to taste <br> 3 fresh corn tortillas <br> handful grape tomatoes, halved<br> 1/4 cup diced onion<br> fresh cilantro, for garnish<br> <br> Heat coconut oil in a large skillet and add portobellos, cook for about 5 minutes. <br> Add in spinach and black beans and season with spices of choice, we like to add just a pinch of everything. Cook for another 1-2 minutes, or until spices are fragrant. Set aside.<br> <br> Heat tortillas in a dry pan for about 30 seconds per side. Add a half cup of vegetable filling to each tortilla and garnish with tomatoes, onion & cilantro.
