- 1 cut in half and sliced red onion
- 2 teaspoons olive oil
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon kosher salt

- 1 1/3 cup (plus 1/4 cup extra if needed) gluten-free 1:1 flour
- 2/3 cup oat milk yogurt
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1 1/2 teaspoons (plus 1 extra teaspoon if needed) olive oil

- 1/4 cup unsweetened oat milk
- 1/4 cup fig jam
- 3/4 cup shredded dairy-free gouda
- 3/4 cup shredded dairy-free mozzarella
- 3/4 cup EPIC Uncured Bacon Bits
- 1 tablespoon fresh chopped parsley
Method
Step 1
Caramelize the Onions: In a pan over low heat, combine sliced red onion, olive oil, balsamic vinegar, and salt. Sauté for 45-50 minutes, stirring occasionally until caramelized. Set aside.
Step 2
Make the Dough: In a bowl, mix gluten-free flour, oat milk yogurt, baking powder, salt, and olive oil until a dough forms. Adjust with additional flour or olive oil as needed—the dough should be soft but not sticky or crumbly.
Step 3
Lightly flour a cutting board with gluten-free flour. Knead the dough with your fingers and roll it out to about 1/4 inch thick.

Preheat the oven to 425°F. Heat 1/2 teaspoon olive oil in a large fry pan over medium heat. Carefully add the dough and bake for 2-4 minutes per side until lightly golden. Remove from heat.

Prepare the Sauce: In a small bowl, whisk together fig jam and oat milk until smooth.
