- 3 Handsome Brook Farms Pasture Raised Organic eggs
- 1 tablespoon heavy cream
- Kosher salt, to taste.
- Freshly cracked black peppercorns, to taste.
- 1 tablespoon unsalted butter
In a medium bowl, whisk the eggs and cream with a heavy pinch of salt and pepper until very smooth.
In a medium nonstick skillet, melt the butter over medium heat. Add the egg mixture and cook, stirring constantly with a rubber spatula until the eggs are just about set but still wet, 2-3 minutes. Remove from the heat and continue stirring until the eggs are cooked through but still glossy, about 1 minute more. Transfer to a plate and serve.
