ingredients
- 1 cup oats
- 1 cup shredded coconut
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 12 ounces silken tofu
- 1/4 cup lemon juice
- 1 lemon, zested
- 2 tablespoons cornstarch
- 1/2 cup xylitol or coconut sugar
- 1 teaspoon vanilla extract
- pinch of turmeric, for color
Method
Step 1
Preheat the oven in 400°F. Line an 8x8 pan with parchment paper.
Step 2
To make the base, process coconut and oatmeal in a blender or food processor until a sand like texture is achieved.
Step 3
Then add the maple syrup and the vanilla extract and process again until you get a firm dough that holds together when you press with your fingers. If it is too dry, add a bit of plant based milk to moisten it.
Step 4
Now press the base into the pre-lined baking tray. Set aside.
Step 5
For the filling, mix the rest of the ingredients in a blender or food processor until smooth and creamy.
Step 6
Pour the filling into the pressed shell.
Step 7
Bake in the oven until the top is set and the edges of the crust are lightly golden brown, 35-40 minutes. Remove from the oven and let cool in the refrigerator for at least an hour. The center may be soft after baking, but the cream will firm up once it cools in the refrigerator.
Step 8
Then it's ready to enjoy!
