ingredients
- 3 ripe bananas, divided
- 1 cup oatmeal flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 2 teaspoons baking powder
- 4 tablespoons coconut oil
- 1/4 cup plant based milk
- 1/4 cup chocolate chips, optional
Method
Step 1
Preheat oven to 350°F.
Step 2
In a medium mixing bowl, add the oatmeal flour, almond flour, coconut sugar and baking powder and stir to combine.
Step 3
Mash 2 of the bananas with a fork or food processor, then add them to the bowl along with the oil and plant based milk. Pour the banana bread batter into a 2" deep sheet pan.
Step 4
To decorate the banana bread, slice 1 banana down the middle and place on top of the mixture.
Step 5
Bake for 20 to 30 minutes. Let cool completely before cutting. Then enjoy!
