ingredients

  • 8 ounces vegan ricotta or cream cheese
  • 2 tablespoons maple syrup, plus more for serving
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup toasted pecans, finely chopped
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup dried unsweetened cranberries, chopped
  • 1/2 cup fresh parsley, finely chopped
  • 1 tablespoon lemon zest

Method

  • Step 1

    In a mixing bowl, combine vegan ricotta, maple syrup, garlic powder, salt, and half of the pecans. Use a fork or hand mixer to thoroughly combine. Set aside.

  • Step 2

    In a separate bowl, mix the remaining pecans, pistachios, cranberries, and parsley. Stir well to create the coating mixture.

  • Step 3

    Scoop out 1 1/2 tablespoon portions of the ricotta mixture using a cookie scoop and place them in the dry coating mixture one at a time. Roll and press the coating into each ball using your hands. Place the coated balls on a serving tray. Repeat until all the cheese mixture is used.

  • Step 4

    Once all cheese balls are prepped, drizzle them with extra maple syrup if desired and sprinkle with the remaining coating.

  • Step 5

    Serve the vegan holiday cheese balls chilled with crackers.
