ingredients
- 16 ounces high-protein super firm tofu, cubed
- 12 ounces cherry tomatoes, halved
- 12 ounces mini sweet peppers
- 2 cups sweet corn
- 1 tablespoon coconut aminos or tamari (or olive oil)
- 1/2 teaspoon salt and pepper
- 1 avocado, cubed
- 1/2 bunch cilantro, chopped
- 8-10 basil leaves, chopped

Chili Lime Dressing
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/4 to 1/2 teaspoon salt
- 1 large lime, zested and juiced
- 1 teaspoon maple syrup
- 1 tablespoon roasted tahini
Method
Step 1
Preheat the oven to 425°F and line a large metal baking sheet with parchment paper.
Step 2
Spread the tomatoes, tofu, peppers, and corn on the baking sheet and drizzle with coconut aminos or oil if using. Sprinkle with salt and pepper and use your hands to gently coat.
Step 3
Transfer to the oven and roast for 20-25 minutes until golden.
Step 4
Meanwhile, add the ingredients for the dressing to a jar and whisk to combine. Season to taste by adding additional salt and pepper, maple syrup, or lime juice if desired.
Step 5
Remove the ingredients from the oven and let cool for 5 minutes before transferring to a bowl.
Step 6
Add remaining ingredients and drizzle with dressing. Toss to combine and serve.
