  • 2 cups glutinous rice flour
  • 5 tablespoons white sugar
  • 1/2 teaspoon Kosher salt
  • 1 1/4 cup boiling water
  • 3/4 cup red bean paste, chilled
  • Vegetable oil, for frying
  • 1 tablespoon Nutella®, per serving

Method

  • Step 1

    In a mixing bowl, whisk together glutinous rice flour, sugar, and salt.

  • Step 2

    Add boiling water. Use a spatula to mix until it becomes a dough. Cover and let it rest at room temp for 30 min.

  • Step 3

    Soak the sesame seeds in a bowl of water for 2 minutes. Drain and spread them on a plate or tray to dry.

  • Step 4

    Prepare the filling by rolling 12 balls made of 1 tbsp red bean filling each. For consistent results, use a 1 tbsp cookie scoop.

  • Step 5

    Once the dough is done resting, divide it into 12 pieces. Roll them into a smooth ball.

  • Step 6

    To assemble, lightly dust your working surface and hands with glutinous rice flour. Flatten a dough ball into a 3-4 inch diameter round. Place one piece of filling in the center and pinch to close. Dip the ball into water, then roll it in sesame seeds. Repeat until you make about 12 sesame balls.

  • Step 7

    Fry at 300 F for 8 minutes, then increase the heat to 350F. Cook only about 3-5 sesame balls at a time to avoid overcrowding, and keep them rolling around the pan for even cooking. Eventually they will begin to float, so you may occasionally submerge the pieces in the oil to expand their size.

  • Step 8

    Once at 350 F, fry for another 2-5 minutes until golden.

  • Step 9

    Remove sesame balls from the pan and let dry on a cooling rack. Repeat the frying steps for the next batch.

  • Step 10

    Serve with Nutella® on the side!
