Sun-Dried Tomato Pesto

Serves or Makes: 4


  • 1 tablespoon neutral oil
  • 1 large onion, chopped small
  • 5 cloves garlic, chopped
  • 1 cup sun-dried tomatoes
  • 1 (14 ounce) can diced tomatoes
  • 1/ 4 cup nutritional yeast
  • 1/ 4 cup pine nuts
  • 1 cup packed fresh basil
  • 1 teaspoon salt
  • 1 (12 ounce) box pasta, cooked according to package directions


  • Step 1

    Heat a medium sized pan on medium. Once hot, add the oil, chopped onions and garlic and stir. Cook for 5-7 minutes stirring occasionally, until the onions are translucent but not browned.

  • Step 2

    Add the diced tomatoes, nutritional yeast, and salt to the pan and stir. Cook for an additional 2-3 minutes.

  • Step 3

    In a food processor or high powered blender, combine the ingredients from the pan along with the pine nuts, sun-dried tomatoes, and fresh basil. Pulse until the sauce has become a desired smooth consistency.

  • Step 4

    Add sauce to your cooked pasta and top with garnishes. For this pasta I like to use pine nuts, cheese, or fresh basil. Eat and enjoy!

For the Garnish

  • 1 teaspoon dried basil
  • 1 tablespoon pine nuts
  • 1/ 4 cup dairy-free cheese
