These chewy and sweet date bars are so delicous, so you won't believe how easy they are to make. The crust is made with dates, almond flour, walnuts, and coconut oil. These ingredients are blended and pressed into a pan. Cover this crust with melted chocolate, finish with freeze-dried berries and freezer until they are set. Slice and enjoy!!

Date Bars

  • 1 cup almond flour
  • 1/2 cup raw walnuts, unsalted
  • 1 cup dates, with the pits removed, soaked in warm water for 15-20 minutes, then drained
  • 2 teaspoons coconut oil,
  • 1/4 teaspoon salt

Chocolate

  • 1/2 cup dark chocolate
  • 1 cup freeze dried berries, substitute with any freeze dried fruit.

Method

  • Step 1

    Line a 9 inch by 5 inch loaf pan with parchment paper.

  • Step 2

    In a high powered blender or food processor combine the almond flour, walnuts, dates, coconut oil, and sea salt. Pulse until the ingredients have turned into a dough like texture.

  • Step 3

    Transfer the date mixture to the pan. Using your hands or a rubber spatula press down the mixture into an even packed layer.

  • Step 4

    Combine the chocolate in a microwave-safe bowl. Microwave for 30 second intervals stirring between each one until the chocolate has melted.

  • Step 5

    Pour the chocolate on top of the date layer and spread it evenly. Sprinkle the freeze dried berries on top. Pop the pan back into the freezer for 15-20 minutes or until the chocolate has slightly hardened.

  • Step 6

    Take the pan out and cut them into bars. Place the bars back into the freezer for 20-25 minutes or until the chocolate layer has completely hardened.

  • Step 7

    Immediately eat these bars or store them in the freezer until you are ready to enjoy them. The chocolate will slowly melt if left out for a long period of time.
