  • 1 cup raw pistachios, shelled and peeled
  • 2 tablespoons white chocolate, melted
  • 1 tablespoon olive oil
  • 1/4 cup heavy cream
  • 2 tablespoons milk (for cold foam)
  • 1/2 teaspoon sweetener of choice
  • 1 1/2 teaspoons Jade Leaf Organic Ceremonial Matcha
  • 1/4 cup water
  • 1 teaspoon vanilla syrup
  • 1 cup ice
  • 1 cup milk (for latte base)
  • Chopped pistachios, for garnish

Method

  • Step 1

    Add pistachios to a food processor and grind for 1–2 minutes until coarsely chopped. Reserve 1 tsp for garnish.

  • Step 2

    Add white chocolate to the processor and grind until the mixture is finely chopped and begins to come together.

  • Step 3

    Add olive oil and continue to process until the mixture becomes a thick, creamy pistachio paste.

  • Step 4

    In a glass, combine 1 ½ teaspoons pistachio paste, heavy cream, milk, and sweetener. Froth using a handheld frother until soft and fluffy, but still pourable.

  • Step 5

    In a matcha bowl, sift the matcha powder and add water. Whisk with a bamboo whisk in a zigzag motion for 20–30 seconds until frothy.

  • Step 6

    In a serving glass, layer ice, vanilla syrup, milk, and whisked matcha.

  • Step 7

    Top with pistachio cold foam and garnish with chopped pistachios. Enjoy immediately!
