"These heavenly, no-bake, coconut truffles are so easy you're going to be wondering how could you possibly not know about them! I'm sharing my classic recipe featuring #ricotta , plus a vegan version with condensed coconut milk for my vegan friends or any of you who can't get their hands on fresh ricotta. Honestly both versions are incredible and I'm unable to pick one."

ingredients

  • 1 cup fresh ricotta (can substitute vegan ricotta or coconut milk for a vegan version)
  • 1/2 cup shredded coconut, plus more for coating
  • 3/4 cup castor sugar
  • crushed pistachios, for coating
  • cocoa powder, for coating

Method

  • Step 1

    In a large bowl, combine the ricotta, sugar and shredded coconut.

  • Step 2

    Shape into balls. Roll in cocoa powder, nuts, and shredded coconut as desired. Refrigerate up to 4 days.
