Green Beans and Carrot Stir Fry (Indian Poriyal)

"This is a fuss free, South Indian inspired dish I make quite often. It's so so easy and we like to eat it super hot with flatbread and some yogurt on the side. You can customise with any kind of shredded or diced vegetables. Just make sure you add some spices and curry leaves"

ingredients

  • 2 carrots, diced
  • 7 ounces green beans, diced
  • 1 large onion, sliced
  • 1 tablespoon neutral oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon urad dal
  • 2 green chilies, sliced lengthwise
  • 1 bunch curry leaves
  • 1 teaspoon ground turmeric
  • 2 tablespoons fresh or dry grated coconut

Method

  • Step 1

    Bring a medium pot of water to boil and parboil the carrots and beans for 2 minutes. Drain and set aside.

  • Step 2

    Heat oil in a pan or wok on high heat and add mustard seeds. When they crackle, add cumin seeds, urad dal, green chilies and curry leaves. Add turmeric and mix.

  • Step 3

    Next add the carrots, onions, beans and salt and stir-fry on medium heat for about 5 minutes. Add grated coconut, stir for 30 seconds or so and turn off the heat. Serve immediately and enjoy!
