ingredients
For the Dough
- 4 cups 00 flour or all-purpose flour
- 1 1/4 cups lukewarm water
- 1 1/2 grams dried yeast
- 1 teaspoon honey or sugar
- 7 grams salt
- 2 tablespoons olive oil

- 3 tablespoons olive oil
- 3 eggs
- 5 pieces Prosciutto
- 1 (8 oz) ball burrata
- 1/2 cup shredded Gruyere cheese
- 1/2 cup watercress
- Salt, to taste
- Coarsely cracked black pepper, to taste
Method
Step 1
To the bowl of a stand mixer add lukewarm water, yeast, honey and gently stir to combine. Allow the yeast to activate.
Step 2
Once the yeast has activated, attach the dough hook to the stand mixer, add flour and mix on medium-low speed until the dough becomes somewhat smooth. Add salt and mix on medium speed until fully incorporated.
Step 3
Remove the dough from the mixer and knead with your hands until it springs back when poked. Transfer to a large mixing bowl, rub 1-2 tablespoons of olive oil over the dough and cover with plastic wrap. Allow the dough to rest and rise until it has doubled in size, about 1-3 hours. If making one day ahead, place in the fridge overnight.
Step 4
When the dough has doubled in size, punch down the dough until it deflates and place it on a floured clean surface. Divide in 2-3 equal parts and shape them into balls using your hands. Once done, cover them with a clean cloth and let them stand for 30 minutes at room temperature, before using them to make your pizzas.
To Bake and Assemble Pizza
Step 1
Preheat the oven to 450°F and oil a baking sheet.
Step 2
Spread the dough to your preferred size and place it on top of the baking sheet.
Step 3
Rub olive oil on the pizza dough then spread the watercress along with gruyere around the pizza, bake the pizza for 10 minutes,
