When it comes to clean eating, I'm all for avocados and chickpeas. The spread is a beet hummus and you should all know how much I love beets! They promote healthy nerve & muscle function and are super high in manganese which helps keep your bones, liver and kidneys working. One of the perks of working from home is getting to make all the Buddha bowls my heart desires!! Here's my #inspiredbynick buddha bowl with quinoa lentil salad + cumin and turmeric + sliced avocados + shredded purple cabbage, carrot blossoms (I just felt like calling them that so roll with it), garden tomatoes + baby cucumber rolls!
