ingredients
For the Atayef
- 3 cups warm water, divided
- 1 teaspoon baking soda
- 2 cups flour
- 1/2 cup fine semolina
- 1 teaspoon yeast
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1 tablespoon dried full-fat milk powder
- 1 teaspoon vanilla or vanilla powder (you can also use rose water)
- Butter or ghee, to brush
Method
Step 1
To 1 cup of warm water, add the baking soda, mix and set aside. In a large mixing bowl, whisk together the flour, semolina, yeast, sugar, baking powder and milk powder.
Step 2
To the mixed dry ingredients, whisk in 2 cups warm water.
Step 3
Then add the 1 cup of water/baking soda blend, slowly while blending with an immersion blender. You should blend for about 5 minutes. (You can also use a regular blender, but first whisk by hand until thoroughly incorporated and then pour into blender.)
Step 4
Batter will be smooth, bubbly and thin.
Step 5
Heat a non-stick pan or griddle to medium/low heat. Do NOT grease pan. Pour batter onto pan- similar to pancakes, but you only cook one side. Once the side facing you bubbles and dries, remove. You might need a few practice runs and also adjust heat as the pan heats up.
Step 6
When you remove from the pan, place on a clean, fragrance-free kitchen towel or sheet. Keep covered so they don’t dry out, making sure not to stack warm or they will stick together.
Step 7
Stuff with cheese or walnut filling.
Step 8
Brush with butter or ghee, place on a greased tray and bake until golden/crispy at 375 degrees F. (About 15 min). You can also air-fry or pan fry.
Step 9
Pour Attir sugar syrup (recipe below) on top immediately after removing from oven.

Attir Sugar Syrup
- 1 1/4 cups water
- 2 cups sugar
- 1 teaspoon lemon juice
- 1 teaspoon orange blossom or rose water
For the Attir Sugar Syrup
Step 1
In a small pot, gently mix all ingredients except rosewater. Bring to a boil then lower heat to simmer 7-10 min. Remove from heat and add rosewater.
