- 2 cups shredded cooked chicken (use rotisserie for convenience)
- 1 teaspoon Italian seasoning
- 1 (6 ounce) can Red Gold Sweet Basil Tomato Paste
- 3 cups low-sodium chicken or vegetable broth
- 1 pound uncooked gnocchi
- 1 bay leaf
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 5 ounces fresh mozzarella, torn into pieces
- Fresh parsley or basil, chopped for garnish

Step 1
Preheat the broiler and position an oven rack 8 inches below the heat source.
