"Another difficult decision after a day of working on the house. Beer or Cocktail? Nope, no decisions. Both.
A bit of a riff on a classic Rum Runner, I decided to whip up a little beer syrup with a nice juicy IPA that added some tasty notes of grapefruit and orange and split the base between a gin and a dry botanical rum.
Juicy, just a bit funky, and a nice tropical way to shake off the day."

ingredients
- 1 1/2 ounce floral dry rum
- 1 ounce london dry gin
- 1/2 strawberry infused Aperol
- 3 ounces pineapple juice
- 1 ounce lime juice
- 3/4 IPA syrup
- 2 dashes Peychaud's Bitters
Method
Step 1
Strawberry Aperol: Using about .5 cups of trimmed pieces off of strawberries, cover with Aperol. Allow this to infuse for approximately 2 weeks and then fine strain.
Step 2
IPA Syrup: Using 12 oz of beer, warm in saucepan (don't overheat or it goes horribly wrong) and add 1 cup of sugar. Stir until combined and beer has been reduced by about 1/3.
Step 3
Shake all ingredients except for bitters with crushed ice and pour everything into waiting pint glass. Top with ice and add bitters.
