Stuffed Avocados 


Makes 4 servings 



  • 2 avocados, halved

  • Handful of cherry tomatoes, quartered

  • 1 baby cucumber, thinly sliced

  • Handful of pomegranate seeds

  • Spring of mint

  • Spring of thyme

  • Dash of lemon juice

  • Salt & pepper


Slice your avocados and remove the pits. Set aside. Slice your tomatoes and cucumbers. Remove mint and thyme from the stem. Fill your avocados with tomatoes, cucumbers and pomegranate seeds. Sprinkle with mint, thyme, salt, pepper and lemon juice.
