Been thinking about more ways I can implement Michael Pollan’s food rule, “Eat food, not too much, mostly plants.” Today I’m partnering up with @TheFeedFeed and @DrinkTelula to do just that. Even if we end up indulging in a sweeter breakfast (like these apple muffins) I’ve been pairing it with #Telula juice to include more plants in our diet. Grab this muffin recipe below! #ad #LetsJuiceThis #FeedFeed #DrinkTelula Apple Muffins 2 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1 tablespoon cinnamon 1/2 cup unsalted butter 1/2 cup sugar 1/2 cup brown sugar 1 egg 1 cup vanilla yogurt 2 large apples, cored, and coarsely chopped (keep skin on) Preheat the oven to 450°F and chop your apples. In a large mixing bowl combine your flour, baking powder, baking soda, salt, and cinnamon. In your mixer cream the butter and add your sugar and 1/4 cup of the brown sugar. Beat until fluffy. Add the egg and mix well. Mix in your yogurt. Stir in the dry ingredients and add in the apple chunks. Divide the batter evenly between 18 muffin cups and sprinkle the remaining 1/4 cup of brown sugar on top. Bake at 450°F for 10 minutes, then turn the heat down to 400°F, and bake for an additional 5 to 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
