  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 large yellow onion, diced
  • 1 teaspoon dried parsley
  • 2 cups baby potatoes, diced
  • 4 cups beef, chicken, or vegetable stock
  • 1 cup whole milk
  • 1 cup shredded cheddar
  • 1 teaspoon kosher salt, adjusted to taste
  • 1/2 teaspoon freshly ground black pepper, adjusted to taste

Method

  • Step 1

    In a large pot over medium heat, cook the ground beef, breaking it into crumbles for 6 to 8 minutes, until fully browned and no longer pink. Drain any excess grease and set the cooked beef aside.

  • Step 2

    In the same pot, melt the butter. Add the diced carrots, celery, and onions along with the dried parsley. Stir and sauté for about 10 minutes, or until the vegetables are soft and tender.

    Add the diced potatoes, cooked ground beef, and stock to the pot. Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for 10 to 12 minutes, or until the potatoes are fork-tender.
