Fat Bombs
- 1 cup natural peanut butter (no sugar)
- 1/2 cup cup coconut oil, melted
- 1/4 cup powdered erythritol
- 1 tablespoons vanilla extract
- 2 tablespoons cocoa powder (for chocolate variation)
- 1/2 tablespoons peppermint extract (for mint variation)
- 1/4 cup unsweetened shredded coconut
- 1 cup grated parmesan
- 1/2 teaspoon garlic powder
- 1 cup raw pumpkin seeds
- 1 teaspoon olive oil
- 1/2 teaspoon chili powder
- 1/4 teaspoon sea salt
Method
Spicy Pepitas
Step 1
Mix peanut butter, coconut oil, erythritol, and vanilla until smooth.
Step 2
Divide into 3 portions. Add cocoa to one, peppermint to another, and coconut to the third.
Step 3
Spoon into silicone molds or roll into balls. Chill 30 mins.
Step 4
Preheat oven to 400°F (200°C).
Step 5
Drop parmesan in small mounds on parchment paper. Sprinkle with garlic powder.
Step 6
Bake 5-7 mins until golden. Cool completely.
Step 7
Toss pepitas with oil, chili powder, and salt.
Step 8
Roast at 350°F (175°C) for 8-10 mins. Cool 5 mins.
