Love turkish borek with spinach & cheese...
This is my grandmother's 60 year old recipe... It is not only delicious and but also full of memories...
5 cups whole-grain flour
5 tablespoons extra virgin olive oil
2 cups warm water
1 dessertspoon salt
In a large bowl, mix together all the ingredients and make a soft dough. Leave it in refrigerator for 2 hours. After 2 hours, divide it into 3 equal pieces.
1 kg clean and dry fresh cut spinach
250 gr feta cheese
(as optinal) leek, onion, stringer ...
In an other bowl, mix together all the ingredients.
Spread the first dough piece according to the size of oven tray. This is the first layer. Than put the half of the mixture on the dough on tray. This is the second layer.
Spread the second dough piece and put the mixture on. This is the third layer. Pour 1 tablespoon extra virgin olive oil over the layer. Than put the other half of mixture on it. This is the fourth layer.
And spread the last dough piece and put on the mixture. This is the last layer. As optional, mix 1 tablespoon extra virgin olive oil and 1 egg yolk and pour over the last layer.
Preheat the oven to 350 F(180 C) and cook for about 45 - 50 minutes, until it turns golden brown. Serve warm and with a glass of tea.It is so easy, isn't it?Enjoy your meal...
