Fill with whatever fruit is in season ... <br> Pate Sucre with vanilla and orange zest with a little whole grain flour to give it a little texture.<br> Once you've made the pastry roll it out sprinkle ground about 2 tbsp. almonds in the centre of the pastry disk. <br> Chop up your fruit and toss in a little coconut palm sugar ( or regular caster) pile into the centre of the pastry disk then use your hands to bring up the sides. <br> It's meant to be rustic so don't worry about the uneven edges. <br> Chill and preheat the oven to 350 f / 180c with a baking sheet inside. <br> When the oven is hot brush the tart with a little egg and sprinkle with sugar then slide into the hot baking sheet and bake until golden and crisp
