Pancakes: 1 c buckwheat flour 1 tbsp coconut sugar1 tbsp homemade raw date syrup 1 tsp aluminum-free baking powder1 tsp baking soda¼ teaspoon salt1 1/4 c buttermilk (I used 1/2 c of homemade yogurt mixed with 3/4 c of whey (leftover from straining my yogurt into labneh for the filling) 1 large egg½ teaspoon pure vanilla extractOrganic butter or coconut oil for the pan.
Mix dry ingredients and wet ingredients separately then fold the wet into the dry until a smooth consistency is reached. Cook in the pan or skillet on medium heat for 3 minutes on one side or until u see bubbles at the surface then flip it and cook a couple more minutes until golden brown. The labneh filling: 1/2 cup of homemade labneh (strained yogurt) 1 tbsp honey or sweetener of choice 1 tbsp of homemade cashew coconut butter Whip together until a smooth consistency is achieved, and adjust sweetness as needed. I roasted the peaches mixed with some date syrup in the 375 deg oven for 25 min.
