Recipe

  • 32 ounces vegetable broth
  • 1 (14 ounce) can black beans
  • 1 (14 ounce) can crushed tomatoes
  • 1/ 2 cup quinoa
  • 1 (12 ounce) bag frozen vegetable medley, (peas, carrots, green beans, corn)
  • 1 teaspoon smoked tobasco
  • 1/ 2 teaspoon cumin
  • 1/ 2 teaspoon black pepper
  • 1/ 2 teaspoon garlic powder

Method

  • Step 1

    Pour all ingredients into a large pot. Place over medium heat and bring to a boil.

  • Step 2

    Let boil for 5 minutes, and then lower heat to low and let simmer for 30 minutes.
