Yield: Serves or Makes 8 slices
Preheat oven to 350 degrees and lightly grease a baking sheet.
Slice the loaf of french bread into thick slices (I was able to get 8 slices out of my loaf).
In a shallow bowl, combine the eggs, pumpkin and milk and whisk together with a fork until it is well combined. Add in the cinnamon, nutmeg, ginger, vanilla and brown sugar and whisk together.
Scoop out the pumpkin batter with a small spoon and coat both sides of each piece of bread, using the spoon to evenly spread it across. Place the coated bread on the baking sheet and place in the preheated oven.
Bake for about 5 minutes on one side, remove from the oven and flip each slice of bread so that it can cook on the other side.
Bake for 5 more minutes and remove from the oven. The French toast should be lightly toasted. If it is not, place it back in the oven for 2-3 more minutes.
