To prepare the meat:
Heat up olive oil in a large frying pan over medium heat. Add diced onions, 1 clove of garlic (minced), salt and Italian seasoning. Sautee until onions are translucent and garlic is golden brown. Add in the ground beef to the same frying pan and cook until brown, stirring frequently. Add in the diced tomatoes and tomato paste and stir everything together. Reduce heat to low and let simmer for 15 minutes.
To prepare the bread:
While meat sauce is simmering, place bread in the oven at 350 degrees to toast, until it is golden brown. Remove from oven and use 1 clove of garlic to rub on the top side of each slice of bread. Place 1/2 slice of provolone on each piece of bread, transfer to a baking sheet and place in the oven for 3 minutes, or until the cheese is melted.
Top each slice of bread with the meat sauce, sprinkle parmesan cheese on top and garnish with chopped parsley. Serve hot.
