ingredients

  • 1 1/2 cups Cottage cheese
  • 1 cup All-purpose flour
  • 1 tablespoons Cornflour
  • 1 cup owdered Sugar
  • 1 teaspoons Vanilla extract
  • 1 teaspoons Baking Powder
  • 1 teaspoon Baking soda
  • 20 pieces Dry Cranberries
  • 2 tablespoons Butter

Method

  • Step 1

    In a large bowl, crumble cottage cheese and mash it lightly with the help of a fork.

  • Step 2

    Add Cornflour, vanilla essence, powdered sugar, baking soda, baking powder and mix well.

  • Step 3

    Now add in all-purpose flour, (leaving little flour aside for rolling) and dry cranberries, then mix well again.

  • Step 4

    At this point, knead the mixture like a dough, you do not require to add any milk, the moisture content in the cottage cheese will help to bind the dough.

  • Step 5

    In a shallow bowl keep the remaining flour to roll or the pancakes.

  • Step 6

    Take a lemon size ball of dough, flatten the side of the ball to get a cube-shaped pancake.

  • Step 7

    Now with the help of a butterknife sharpen the edges of the pancakes and rub it into flour on all the sides and shake off extra flour. Repeat the same process with the remaining dough.

  • Step 8

    Heat a nonstick pan and add 1 tbsp of butter, and gently put Syrniki into the pan.

  • Step 9

    Cook for about 2 minutes each side, till all the sides are golden brown and cooked properly. At this point, you can gently prick a toothpick to check if is cooked well from inside.

  • Step 10

    Now transfer all the Syrinkis into a bowl. You might need to cook pancakes in 2 batches if you cook 6-7 together at a time.

  • Step 11

    Now dust it with powdered sugar and serve it hot, as it will not taste that good once it cools down.
