Brussels Sprouts Salad
Back in the early days of my website, a couple of the first recipes were Brussels sprouts salads. And now I'm back to being slightly obsessed with them
2 cups fresh Brussels sprouts, washed
1 cup fresh green peas
1/4 fresh leek
1 ripe avocado
4-5 pieces of pickled cook s comb mushrooms
For the dressing:
60 g raw honey or maple syrup
50 g sour cherry vinegar or fresh lime juice
3g sea salt
pinch of cumin and black pepper
Start by cutting your Brussels sprouts in quarters.
Cut the leek into nice thin rings and then the avocado, as you like (in big pieces or small).
Now place these and the fresh peas in a mixing bowl.
Now prepare the dressing starting with the oil and honey/maple.
Add the rest of the dressing ingredients and feel free to add your fav spices.
Pour on the salad and mix well.
Place a big spoon full of the salad on the plate and add a few pieces of pickles.
Serve it with a nice toast of sourdough bread!
