ingredients

  • 1/2 cup soaked Cashews
  • 3 Garlic Cloves,
  • 1/2 Shallot,
  • 1/4 cup Basil
  • 1/2 teaspoon Salt
  • 2 tablespoon Nutritional Yeast
  • 3 tablespoons Olive Oil
  • 1/2 juiced Lemon
  • 4 serving Chickpea Pasta

Method

  • Step 1

    Soak cashews in water for an hour

  • Step 2

    Combine ALL ingredients besides pasta into food processor/blender a) If you don’t own one, chop everything up and combine in bowl b) Blend ingredients for 1-2 minutes c) Push sides of mixer down and add olive oil as needed d) Blend until creamy

  • Step 3

    Cook pasta until al dente (firm to the bite)

  • Step 4

    Mix pesto with cooked pasta and enjoy
