For the Yuca Fritters
- 3 peeled and chopped yuca
- 1/2 cup flour
- 1 small grated onion
- 2 beaten eggs
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon baking soda
- for frying vegetable oil

For the Zesty Horseradish Dipping Sauce
- 2 tablespoons freshly grated horseradish
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 clove of minced garlic
- 1 tablespoon chili oil
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon fish sauce
- 1 tablespoon honey
- to taste salt and ground black pepper
Method
Step 1
Mix the Zesty Horseradish Dipping Sauce: Whisk together the freshly grated horseradish, mayonnaise, sour cream, minced garlic, chili oil, sriracha, lime juice, fish sauce, and honey. Season with salt and ground black pepper to taste. Cover the sauce and refrigerate while you prepare the fritters, allowing the flavors to meld.
Step 2
Prepare the Yuca: Place the chopped yuca in a large pot, cover it with water, and bring it to a boil. Cook for 20-30 minutes, or until the yuca is tender. Drain and allow it to cool slightly. Once the yuca has cooled enough to handle, remove the fibrous core from each piece and mash the yuca until smooth.
Step 3
Mix the Fritter Batter: Combine the mashed yuca, grated onion, beaten eggs, flour, salt, black pepper, garlic powder, and baking soda in a large bowl. Mix until everything is well incorporated and the batter is thick.
Step 4
Fry the Fritters: Heat 1″-2″ of vegetable oil over medium heat in a large skillet. Once the oil is hot, fry the yuca fritters in batches until golden brown and crispy, 5-6 minutes. Remove and drain on paper towels.
Step 5
Serve: Plate the crispy yuca fritters with a side of or a drizzle of the zesty horseradish dipping sauce. Garnish with fresh cilantro.
