Yuca Fritters with a Zesty Horseradish Dipping Sauce

ingredients

For the Yuca Fritters

  • 3 whole peeled yuca fritters
  • 1 cup grated queso fresco cheese
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 beaten egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • vegetable oil for frying

For the Zesty Horseradish Dipping Sauce

  • 2 tablespoons freshly grated horseradish
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons chili oil
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon soy sauce
  • 1 clove minced garlic
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon honey
  • salt and pepper to taste

Method

For the Yuca Fritters

  • Step 1

    Boil the peeled yuca in salted water until it becomes soft and tender. Drain the water, and while the yuca is still warm, mash it with a fork or potato masher until smooth. Let it cool slightly.

  • Step 2

    In a mixing bowl, combine the mashed yuca, grated cheese, flour, cornstarch, egg, salt, and ground black pepper. Mix well until all the ingredients are evenly incorporated.

  • Step 3

    Heat the vegetable oil in a frying pan or dutch oven over medium heat. Once the oil is hot, use your hands to form dollops of yuca fritters, about 1″ diameter. You may choose to flatten them into patties, but for sake of room in the frying pan, I kept them spherical.

  • Step 4

    Carefully place the patties in the hot oil, being careful not to overcrowd the pan. Fry the fritters for 2-3 minutes on each side or until they are golden brown and crispy.

  • Step 5

    Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.

For the Zesty Horseradish Dipping Sauce

  • Step 1

    In a mixing bowl, combine the horseradish, mayonnaise, sour cream, chili oil, lime juice, soy sauce, garlic, ginger, and honey. Mix well until all the ingredients are well incorporated.

  • Step 2

    Season the sauce with salt and pepper to taste. Adjust the level of spiciness by adding more or less chili sauce, depending on your preference.

  • Step 3

    Cover the bowl with plastic wrap or transfer the sauce to an airtight container. Let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
