ingredients

  • 12 quartered gala apples
  • 1 quartered navel orange
  • 3 sticks of cinnamon
  • 1 tablespoon whole cloves
  • 1 tablespoon allspice
  • 1 whole vanilla bean
  • 1/2 cup brown sugar
  • 1 cup whiskey
  • 1 cup heavy whipping cream
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Make the Homemade Apple Cider: Quarter the apples and orange. There’s no need to remove peels or seeds. Place them in a large pot and add enough water to cover them. Add cinnamon sticks, whole cloves, allspice berries, and vanilla bean. Sprinkle the brown sugar over the top. Bring the mixture to a boil. Once boiling, reduce the temperature to a simmer. Cook for 2 hours. Mash the apples with a potato masher or spoon to extract as much flavor as possible throughout the cooking process. Strain the apple mixture through a fine-mesh sieve or cheesecloth into a large pot or container.

    Spike the Cider: With the homemade cider still warm, stir in the whiskey. Adjust the amount according to how strong you want the drink. Taste and adjust the sweetness or strength as needed.

  • Step 3

    Prepare the Maple Cream Foam Topping: For the best results, chill your bowl and beaters in the refrigerator for at least 15 minutes before you begin. In a chilled bowl, whip the heavy cream, maple syrup, and vanilla extract until stiff peaks form.

  • Step 4

    Serve: Pour the spiked cider into mugs. Top each mug with a generous dollop of the maple cream foam. Sprinkle a little cinnamon on top of the foam.
