Method

  • Step 1

    Prepare the Crust: Preheat your oven to 325°F (163°C). Combine the chocolate graham cracker crumbs, granulated sugar, and melted butter in a medium bowl. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy, 2-3 minutes. Add the granulated sugar, and mix until well combined, another 1-2 minutes. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract and sour cream until the batter is smooth. Gently fold in the shaved dark chocolate chunks.
