  • 1 medium butternut squash
  • 3 tablespoons unsalted butter
  • 2 tablespoons chopped thyme leaves
  • 1/4 cup heavy cream
  • 1/4 teaspoon nutmeg
  • to taste salt and ground black pepper

Method

  • Step 1

    Prepare the Butternut Squash: Peel the butternut squash, cut it in half lengthwise, and remove the seeds. Cut the squash into roughly equal-sized cubes.

  • Step 2

    Steam the Squash: Fill a pot with a couple of inches of water and bring it to a boil. Place the squash cubes in a steamer basket and set it over the boiling water. Ensure the water doesn’t touch the bottom of the basket. Cover and steam for 15-20 minutes or until the squash is tender and can be easily pierced with a fork.

  • Step 3

    Mash the Squash: Transfer the steamed squash to a large bowl. Mash the squash with a potato masher or fork to your desired consistency.

  • Step 4

    Season the Mash: While the squash is still warm, add the butter and stir until it melts completely. Mix in the chopped fresh thyme, salt, ground black pepper, and nutmeg.

  • Step 5

    Add Cream: Gradually stir in the heavy cream. Adjust the amount to achieve your preferred consistency.

  • Step 6

    Serve: Serve the Thyme Mashed Butternut Squash warm as a delightful side dish. It pairs well with Lemongrass Roasted Chicken.
