  • 12 ounces tagliatelle
  • 1 pound peeled and deveined shrimp
  • 1/2 cup diced pancetta
  • 3 cloves of minced garlic
  • 1/2 cup white wine
  • 1 cup torn basil
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste salt and ground black pepper

Method

  • Step 1

    Cook the Pasta: Cook the tagliatelle noodles in salted boiling water until al dente. Drain and set aside.

  • Step 2

    Cook the Pancetta: In a skillet, sauté the pancetta until crispy, 4-5 minutes. Remove and set aside. Leave behind as much fat as possible in the pan.

  • Step 3

    Cook the Shrimp: Season the shrimp on both sides with salt and ground black pepper. In the same skillet, add the extra virgin olive oil and shrimp. Cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.

  • Step 4

    Make the Sauce: Add the garlic and white wine to the pan, scraping up any bits stuck to the bottom of the pan. Simmer until the wine is reduced by about half, 3-4 minutes. Stir in the heavy cream and most of the Parmesan cheese, reserving some for serving. Simmer until the cheese and melted and the cream is incorporated into the sauce.

    Combine and Serve: Toss in cooked tagliatelle, pancetta, shrimp, and basil together. Mix well.
