  • 10-15 sweet tamarind pods
  • 6 cups water
  • 1/2 cup sugar

Method

  • Step 1

    Prepare the Tamarind: Start by peeling the hard outer shells of the tamarind pods. Remove any strings that run along the veins of the pods.

  • Step 2

    Soak the Tamarind: Place the peeled tamarind in a large bowl. Pour about 3 cups of warm water over the pods, enough to cover them. Let them soak for 1 hour, until they are soft and pliable.

  • Step 3

    Extract the Pulp: Using your hands, squeeze and mash the tamarind in the water to separate the pulp from the seeds and fibers. Continue mashing until you’ve extracted as much pulp as possible.

  • Step 4

    Strain the Mixture: Set a fine mesh strainer over a large bowl or pitcher. Pour the tamarind mixture through the strainer, pressing with a spoon to extract all the juice. Discard the solids.

  • Step 5

    Sweeten the Drink: To the strained tamarind liquid, add sugar to taste. Start with 1/2 cup and add more if needed. Stir until the sugar is fully dissolved.

  • Step 6

    Add Water and Chill: Add the remaining 3 cups of water to the tamarind mixture. Stir well. Refrigerate the Agua Fresca until it’s cold. You can also add ice cubes to the pitcher or directly to the glasses when serving.

  • Step 7

    Serve: Pour the Tamarind Agua Fresca into glasses filled with ice. Garnish each glass with a lime wedge.
