ingredients
- 1 pound sliced smoked sausage
- 2 cups orzo pasta
- 1 medium diced onion
- 3 cloves of minced garlic
- 1/2 cup chopped sun-dried tomatoes
- 1 tablespoon freshly chopped oregano
- 1 tablespoon freshly chopped basil
- 1/2 teaspoon red pepper flakes
- 4 cups chicken broth
- 1 1/2 cups grated Parmesan cheese
- 2 tablespoons extra virgin olive oil
- to taste salt and ground black pepper
Method
Step 1
Brown the Sausage: In a large skillet or pan, heat the extra virgin olive oil over medium heat. Add the sliced smoked sausage and brown them for about 5-7 minutes. Remove the browned sausage from the skillet and set them aside.
Step 2
Sauté Onions and Garlic: In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onions become translucent.
Step 3
Toast the Orzo: Add the orzo pasta to the skillet and toast it for about 2 minutes, stirring frequently until the orzo turns slightly golden.
Step 4
Add Sun-Dried Tomatoes and Spices: Stir in the chopped sun-dried tomatoes, oregano, basil, and red pepper flakes. Cook for an additional 2 minutes, allowing the flavors to meld.
Step 5
Pour in the Broth: Pour in the chicken broth and season with a pinch of salt and ground black pepper. Stir to combine all the ingredients.
Step 6
Simmer: Reduce the heat to low and let it simmer for about 10-12 minutes, until the orzo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
Step 7
Combine with Sausage and Parmesan: Once the orzo is cooked to your liking and the liquid is mostly absorbed, return the browned sausage to the skillet. Stir in about half of the grated Parmesan cheese, reserving some for garnish. Mix everything together until the cheese is melted and the dish is well combined.
Step 8
